Korat Stir-fried Noodles Ban KudJik or Benjawan Kut Chik Noodle is one of the good products of Nakhon Ratchasima as a result of the cooperation among Suranaree University of Technology, KudJik Sub-district Municipality, and KudJik villagers in order to revive the handmade traditional noodles. The production process includes milling rice and then pounding it in the large mortar called Kradeung. After that, the rice grits are ground into flour with a stone mill and then used to make rice noodles. This Korat Stir-fried Noodles Ban KudJik is made from rice noodles that have been baked to prevent them from becoming greasy. The noodles are packaged in sachets weighted 100 and 200 grams, sold with the uniquely-cooked sauce.
